Beer Can Chicken

Ingredients

  • 1 (4-pound) whole chicken
  • 2 tablespoons vegetable oil
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 3 tablespoons of your favorite dry spice rub
  • 1 can beer

Directions

Remove neck and giblets from chicken and discard. Rinse chicken inside and out, and pat dry with paper towels. Rub chicken lightly with oil then rub inside and out with salt, pepper and dry rub. Set aside.

Open beer can and take several gulps (make them big gulps so that the can is half full). Place beer can on a solid surface. Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can. Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its 2 legs and the can like a tripod.

Cook the chicken over medium-high, indirect heat (i.e. no coals or burners on directly under the bird), with the grill cover on, for approximately 1 1/4 hours or until the internal temperature registers 165 degrees F in the breast area and 180 degrees F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife. Remove from grill and let rest for 10 minutes before carving.


 
Meat Tenderizing Hint:

Kitchen Chemistry
Marinades are mainly for flavor, but to some extent they also tenderize. Acids in marinades soften connective tissue. Enzymes in papaya juice also help by breaking down protein. Since raw meat does not readily absorb liquid, however, marinating for a couple of hours will only affect the meat's surface. For the best results, give yourself plenty of time and marinate in a self-sealing plastic bag so that the meat can easily be turned and coated.


 
Simple Easy Kabobs for Grill:

Ingredients:
  one bottle teriyaki marinade
  bell peppers, green, red & yellow, quartered
  sirloin steak, cut in cubes
  vidalia onion, quartered
  pineapple chunks, reserve the juice
  wooden skewers, soaked in water about 10 mins.so they won't burn on grill

Directions:
  Combine all ingredients in large bowl or plastic ziploc bag and pour marinade over. When adding the pineapple chunks pour in juice also. Allow to marinate overnight if possible, or at least 4 hours. Drain marinade and thread ingredients onto skewers. Place on grill and keep turning.
 
Easiest Best Dessert Ever!!
Chocolate Chip Cookie Cool Whip Dessert

2  packages regular Chips Ahoy chocolate chip cookies
2 (8 ounce) containers Cool Whip or Cool Whip Lite
1/2 cup milk

Pour milk in a shallow bowl.
Dip cookies into the milk and place a single layer of cookies in the bottom of a deep dessert dish.
Once cookies cover the bottom of the dish, spoon out a layer of Cool Whip over the cookies so that it covers the cookies completely. Layer should be about an inch thick.
Repeate layers, placing cookies so that it covers up the Cool Whip, then Cool Whip to cover up the cookies.
End the layering with a layer of Cool Whip.
Crumble remaining cookies over the top of your dessert as garnish.
Refrigerate for 1-2 hours.
Serve cold.

 

Chicken Salad in Tomato Cups

Ingredients

  • 1 rotisserie chicken(deli version), skinless and shredded or diced
  • 1/2 small red onion, diced
  •  2 tablespoons freshly chopped tarragon or parsley leaves
  • 1 celery rib, chopped   (optional)
  • 2 tablespoons white wine vinegar
  • 3/4 cup mayonnaise
  • 3 cups halved seedless red grapes (optional)
  • Kosher salt and freshly ground black pepper
  • 6 large beefsteak tomatoes
  • 1 head butter lettuce

Directions

Mix first 9 ingredients in a large bowl.

Core tops of tomatoes with a paring knife. Using a melon baller, scoop out the insides of the tomatoes. Lay a leaf of lettuce in each tomato so it peeks out the top. Fill the tomatoes with a large scoop of the chicken salad and serve.
